Jose’s Restaurant back room was filled with well wishers to bid farewell to Dennis and Elaine Rollfing. They are moving to Dripping Springs, Texas. A group of friends planned a lovely party, and Jose did a grand job of hosting. Multiple friends came from here-and-there to wish the Rollfings all the best on their journey. IPhones and cameras snapped photos. Shauna King took professional shots of the gathering. Everyone enjoyed the delicious food provided by Jose’s. HEB provided a magnificent cake (Elaine is known for her outstanding cakes productions). Fun filled photographs of Rollfing adventures were continuously displayed on a giant screen. Lots of stories, laugher and memories were shared.
Like all such events for beloved folk, this one was bittersweet. Bitter because we do not want to say good-bye; Sweet because we know they are starting a new chapter in their lives. And, we will see them again. After all we know where they live. In addition, the Rollfings plan on visits back to Crystal Beach. So, let us bid them Godspeed and Bon Voyage as Dennis and Elaine start a new chapter in their lives. Thanks for the memories.
