Uncle Bob was my mom’s oldest brother, he was born in 1899, he married Pearl when she was sixteen. Uncle Bob was the son who was working on the road crew when Momma and her younger brother were taken by the gypsies. Of course, that is another story. Bob and Pearl were very frugal people all the way to the end of their lives. I know for a fact that they saved everything, if you changed out something in the house, you saved it even if it was broken. You know, maybe it could be fixed?
Aunt Pearl saved every scrap of food that was left over from dinner. It did not matter if it was vegetables or meat bones. On Saturday, all items in the “ice box” were combined in a soup. This soup was for lunches the next week.
Yesterday I had several items in the fridge and a really big bag in the freezer of rotisserie chicken leftover. I got that out of the freezer and into a big pot of water. Cooked and strained into a bowl, chicken broth and stock. I used half of the liquid for supper and the other went back into the freezer for another night. Cleaned out the fridge and start filling the pot with unusual veggies and pasta. The reason I have all of this is because I never throw away what is left in the cooking pan, it goes into a plastic container. That goes for the two pieces of Popeye’s chicken left over from Sunday.
Added some crackers and butter and there’s dinner for the night and lunch for several days. I happen to have one of those husbands who will have leftovers at least once.
I guess because I remember my Aunt Pearl’s soups, I enjoy carrying on the memory.
